Peanut Brittle Recipe
1 cup butter or margarine
one and a half cup sugar
½ cup golden syrup
½ cup water
½ teaspoon bicarbonate of soda
one and a half cups roasted peanuts
Melt the butter or margarine.
Add some sugar, golden syrup and water and simmer the mix before the sugar has dissolved.
Boost the heat and produce towards the boil.
Stir within the bicarbonate of soda and peanuts and boil over moderate heat, uncovered, towards the hard-crack stage.
Pour right into a greased 30cm x 20 cm pan.
Mark into squares when beginning to create.
Awesome until hard, then enter squares.
Makes about 5 dozen
6 cups sugar
1 cup cake flour
¼ teaspoon salt
1 cup butter or margarine
1 can condensed milk
1 ¼ water
3 Tablespoons of golden syrup
1 Tablespoons of vinegar
14 teaspoon cream of tartar
2 teaspoon vanilla essence
Mix the sugar, caked flour and salt inside a large heavy-based saucepan.
Add some butter or margarine, condensed milk, water, golden syrup and vinegar.
Heat over low heat, stirring constantly, before the sugar has dissolved and also the butter or margarine has melted. (Be mindful that it doesn’t burn).
Dissolve the cream of tartar inside a little water and stir in to the mixture when it starts to boil.
Boil over moderate heat for around twenty minutes, uncovered, towards the soft-ball stage, stirring frequently. (Test by shedding a teaspoonful inside a little water. You will be able to press the fudge right into a soft ball).

3 medium or 4 small pineapples
2 ¼ cups sugar
1 Tablespoons of gelatin
½ cup boiling water
2 pkts lemon or pineapple jelly
castor sugar and/or coconut
Peel and grate or mince the pineapple to obtain a couple of lbs pulp and juice.
Boil the pineapple pulp for 15-twenty minutes until done.
Add some sugar and boil for any further a few minutes.
Dissolve the gelatin within the boiling water, stir in to the pineapple mixture and boil for just a few minutes.
Remove in the stove, add some jelly powder and stir until dissolved.
Pour the mix right into a greased 30 cm x 20 cm pan.
Reduce 3cm x 3cm squares once cold and roll in castor sugar or a combination of castor sugar and coconut.
Makes about 5 dozen.
